1. 2 1/2 c. frosted (white and pink) animal cookies, finely crushed -
2. 4 tbsp. butter, melted -
3. 2 tbsp. granulated sugar -
4. Pinch of kosher salt -
5. 4 (8-oz.) blocks cream cheese, softened -
6. 1 c. granulated sugar -
7. 3 large eggs -
8. 1 tsp. pure vanilla extract -
9. 1/2 c. sour cream -
10. 2 tbsp. all-purpose flour -
11. 1/2 tsp. kosher salt -
12. 2 c. frosted (white and pink) animal cookies, roughly chopped -
13. 2 c. powdered sugar -
14. 2 tbsp. whole milk -
15. Neon pink food coloring -
16. Whipped cream -
17. Whole frosted animal cookies -
18. Rainbow nonpareil sprinkles -

How to cook deliciously - Animal Cookie Cheesecake

1. Stage

Preheat oven to 350°. In a large bowl, mix together animal cracker crumbs, butter, sugar, and salt. Press into the bottom of an 8" or 9" springform pan.

Bake crust until light golden, about 10 to 12 minutes. Set on rack to cool completely and reduce oven temperature to 325°

Make cheesecake: In a large bowl using a hand mixer (or in the bowl of a stand mixer), beat cream cheese and sugar together until no lumps remain. Add eggs, one at a time, then stir in vanilla and sour cream. Add flour and salt and beat until just combined. Fold in chopped animal crackers.

Remove foil and refrigerate cheesecake for at least 5 hours and up to overnight.

Pour glaze over chilled cheesecake and let sit at room temperature until set, about 30 minutes.
