1. 4 slice smoked bacon -
2. 2 c. chicken stock -
3. 1 can black-eyed peas -
4. 1 can cream-style corn -
5. 1 c. chopped red onions -
6. 4 clove garlic -
7. 1 tsp. dried thyme -
8. 1/4 tsp. white pepper -
9. 1 c. roasted red peppers -
10. Salt to taste -
11. 1/4 c. Chopped fresh parsley for garnish -

How to cook deliciously - Black-Eyed Pea and Corn Soup

1. Stage

Cook the bacon in a 3-quart saucepan over medium-high heat until browned. Transfer to a paper towel–lined plate to drain.

2. Stage

Add the stock, black-eyed peas, corn, onion, garlic, thyme, and white pepper to the saucepan. Cover and bring to a boil. Reduce the heat and simmer 15 minutes to blend the flavors.

3. Stage

Stir in the roasted peppers and heat the soup for 1 minute more. Taste and season with salt if needed. Crumble the bacon. Top each serving of soup with bacon and parsley.
