1. 1 lb. ground turkey -
2. 1 c. chopped onion -
3. 2 cloves garlic, minced -
4. 1 tsp. kosher salt -
5. 1/2 tsp. freshly ground black pepper -
6. 1 red bell pepper, diced -
7. 2 c. crushed tomatoes -
8. 3 chipotle chiles in adobo, chopped -
9. 1/2 c. chopped fresh cilantro, plus more for garnish -
10. 2 c. Grated Cheddar -
11. 1 avocado, diced -
12. Sour cream, for serving -

How to cook deliciously - Cheesy Mexican Skillet

1. Stage

Preheat oven to 375°.

2. Stage

In a large skillet over medium-high heat, brown the ground turkey, onion and garlic. Break up meat using a wooden spoon and season with salt and pepper. Sauté about 5 minutes; add bell pepper and cook 2 to 3 minutes more.

Add tomatoes and chipotle; bring to a boil and simmer until warmed through, 2 to 3 minutes. Stir in cilantro and top with cheese. Bake until cheese is melted, 3 to 4 minutes.

Garnish with avocado and more cilantro. Serve with sour cream.
