Spinach Croquettes

My mom used to make these a lot and I do too. They are easy to make, a quick meal, and a great way to get kids to eat spinach!

Ingredients

  • 2 cups cooked spinach

  • 1 cup all-purpose flour

  • 1 cup chilled sparkling water

  • 2 eggs

  • ½ cup grated Parmesan cheese

  • 1 teaspoon baking powder

  • 1 teaspoon chopped garlic

  • ¼ teaspoon white vinegar, or to taste

  • salt and ground black pepper to taste

  • oil for frying

Directions

  1. Combine spinach, flour, sparkling water, eggs, Parmesan cheese, baking powder, garlic, vinegar, salt, and black pepper together in a bowl until batter is evenly combined.

  2. Heat enough oil to cover the bottom of a large skillet over medium heat. Spoon batter into the hot oil, keeping about 1 inch between each croquette. Cook until golden brown, about 90 seconds per side. Repeat with remaining batter.

Cook's Note:

Substitute beer for the sparkling water, if desired.

Canola, peanut, or coconut oil can be used for frying.
