Ingredients

  • 2 ½ pounds boneless, skinless chicken thighs

  • ½ pound chorizo sausage, chopped

  • 2 medium onions, chopped

  • 4 cloves garlic, chopped

  • 1 teaspoon dried oregano

  • ground black pepper to taste

  • 2 (14 ounce) cans diced tomatoes with garlic

  • 1 (6 ounce) can tomato paste

  • 1 (14 ounce) can artichoke hearts, drained and chopped

Directions

  1. Combine chicken thighs, chorizo sausage, onions, garlic, oregano, and pepper in a slow cooker. Stir in diced tomatoes and tomato paste until well mixed. Cook on Low until chicken is no longer pink in the center and the juices run clear, 7 to 9 hours. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

  2. Stir in artichoke hearts and cook on Low until heated through, 10 to 15 more minutes.
