3 medium zucchini, cut into cubes

1 cup Italian-style bread crumbs

Directions

Preheat the oven to 400 degrees F (200 degrees C).

Place zucchini into a nonstick baking dish and drizzle oil over top. Add bread crumbs, Parmesan, garlic, salt, and pepper; mix until well combined.

Bake in the preheated oven, stirring every 10 to 15 minutes, until zucchini is tender and cheese is melted, about 40 minutes.
