Shredded Brussels Sprouts with Dried Apricots and Bacon

Great side dish for the Thanksgiving holiday.

Ingredients

Original recipe (1X) yields 8 servings

  • ¼ cup olive oil

  • 6 cups thinly sliced trimmed Brussels sprouts

  • ¾ cup diced dried apricots

  • ¾ cup crumbled cooked bacon

Directions

  1. Heat oil in a skillet over medium heat. Add Brussels sprouts to the hot oil, cover, and cook for 5 minutes. Add apricots and saute until sprouts are cooked but still firm and bright green, about 5 more minutes. Stir in bacon just before serving.

Cook's Note:

Cranberries can be substituted for apricots.
