My kids love this vegan peanut butter frosting. They said it tastes like the filling in a peanut butter cup. My son has a milk allergy, so I came up with this recipe.

Ingredients

Original recipe (1X) yields 32 servings

  • 1 cup peanut butter

  • ½ cup vegetable shortening

  • 1 teaspoon vanilla extract

  • 2 ½ cups confectioners' sugar

  • ¼ cup soy milk, or more as needed

Directions

  1. Whip peanut butter, shortening, and vanilla together in a mixing bowl until well blended. Add confectioners' sugar and soy milk; mix until light and fluffy. If mixture is too thick, add 1 tablespoon soy milk at a time until creamy and spreadable.
