Ingredients

Original recipe (1X) yields 24 servings

  • 1 cup dates, pitted and chopped

  • ½ cup white sugar

  • ½ cup water

  • ½ cup butter, softened

  • ½ cup packed brown sugar

  • 1 ½ cups all-purpose flour

  • ½ teaspoon salt

  • ¼ teaspoon baking soda

  • 1 ¼ cups rolled oats

  • 2 tablespoons water, or more as needed

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C).

  2. Mix dates, sugar, and 1/2 cup water in a small saucepan over low heat. Bring to a boil and cook until thick and smooth, about 15 minutes. Set aside to cool.

  3. Cream butter and brown sugar together until smooth. Gradually mix in flour, salt, and baking soda. Add oatmeal and mix well. Stir in 2 to 4 tablespoons water, as needed for the dough to come together. Form the dough into a ball and refrigerate for 15 minutes.

  4. Roll dough on a floured surface to 1/8 inch thickness and cut into 2-inch rounds. Place 1/2 of the rounds on cookie sheets. Spoon date mixture in the center of each round and top with another round. Press edges firmly together.

  5. Bake in the preheated oven until browned, about 15 minutes.
