Ingredients

Original recipe (1X) yields 6 servings

  • 2 pounds red potatoes, scrubbed and cubed

  • ¾ cup sour cream

  • ½ cup mayonnaise

  • ½ small red onion, chopped

  • 1 rib celery, finely chopped

  • 3 tablespoons white vinegar

  • 2 tablespoons prepared horseradish

  • 1 tablespoon dried parsley

  • 1 teaspoon dried dill weed

  • 1 teaspoon white sugar

  • ½ teaspoon salt

  • ½ teaspoon ground black pepper

  • 4 hard-cooked eggs, chopped

  • 4 slices cooked bacon, crumbled

Directions

  1. Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain and cool.

  2. Mix sour cream, mayonnaise, red onion, celery, vinegar, horseradish, parsley, dill, sugar, salt, and pepper together in a large bowl. Stir in cooled potatoes. Fold in eggs and bacon. Cover and chill until serving.
