Dirty Rice with Black-Eyed Peas

The hubby is now on a low-sodium diet--a challenge to our beans, rice, and protein meals! This a great low-sodium interpretation of dirty rice with black-eyed peas. Serve with low-sodium hot sauce.

Ingredients

Original recipe (1X) yields 8 servings

  • 1 pound turkey Italian sausages, casings removed

  • 1 pound turkey kielbasa, sliced

  • 1 large onion, diced

  • 1 cup diced celery

  • 1 cup diced green bell pepper

  • 2 tablespoons minced garlic

  • 4 cups water

  • 2 (15 ounce) cans no-salt-added black-eyed peas, rinsed and drained

  • 1 tablespoon reduced-sodium chicken bouillon granules

  • 1 tablespoon cayenne pepper

  • 1 tablespoon chili powder

  • 1 tablespoon dried oregano

  • 1 tablespoon dried basil

  • 1 tablespoon ground black pepper

  • 2 bay leaves, or more to taste

  • 2 cups uncooked white rice

  • 1 bunch green onions, sliced

Directions

  1. Heat a large skillet over medium-high heat. Cook and stir turkey Italian sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Transfer to a bowl.

  2. Heat the same pan over medium-high heat and brown kielbasa slices, 5 to 7 minutes. Transfer to the same bowl with Italian sausage.

  3. Heat the drippings over medium-high heat in the same pan. Add onion, celery, and bell pepper; saute for 3 to 4 minutes. Add garlic and continue to saute until onion is tender, 2 to 3 minutes more.

  4. Transfer sausages and vegetable mixture to a large pot. Add water, black-eyed peas, bouillon, cayenne, chili powder, oregano, basil, pepper, and bay leaves. Bring to a boil. Add rice and return to a boil. Reduce heat to low and simmer until rice is tender, about 25 minutes. Stir in green onions.

Cook's Note:

I used low-sodium turkey kielbasa and Herb Ox(R) brand sodium-free chicken bouillon.
