Sweet Sage Cream Sauce (without the Sage!)

This recipe is for a sweet "sage" cream sauce that we serve over butternut squash ravioli. This sauce has a unique taste that we first tried at a local Italian restaurant. This is our version of their sage cream sauce (even though we don't use sage in our recipe). It is basically all the sweetest tastes of Thanksgiving in a ravioli dish. If you prefer a thinner sauce, add a little more cream.

Ingredients

Original recipe (1X) yields 5 servings

  • 2 tablespoons unsalted butter

  • 1 tablespoon cooking oil

  • 2 tablespoons all-purpose flour

  • ¼ teaspoon dried rosemary

  • ¼ teaspoon dried thyme

  • 1 ½ cups heavy cream

  • 1 tablespoon brown sugar

  • ¼ teaspoon ground cinnamon

  • teaspoon ground nutmeg

  • salt and ground black pepper to taste

Directions

  1. Melt butter with oil in a saucepan over medium heat. Add flour, rosemary, and thyme; cook and stir until smooth, bubbling, and turns a light tan color, 10 to 15 minutes.

  2. Stir in heavy cream, a little at a time, allowing each addition to incorporate fully before adding more. Stir in brown sugar, cinnamon, nutmeg, salt, and black pepper; cook and stir until smooth.
