On a cool evening, when you want to wrap your hands around a warm cup, or if you want to soothe a scratchy, dry throat, try this comforting cider. Brightened with lemon zest and sweetened with honey, it's ready in a flash, when you use your Instant Pot®. Makes about 8 1/2 cup servings.

Ingredients

Original recipe (1X) yields 8 servings

  • 4 cups apple cider

  • 3 cinnamon sticks, plus more for garnish

  • ½ lemon, zested

  • ½ teaspoon whole cloves, or to taste

  • teaspoon ground nutmeg

  • teaspoon ground allspice

  • 1 tablespoon honey, or to taste

  • ½ lemon, sliced

Directions

  1. Combine apple cider, cinnamon sticks, lemon zest, cloves, nutmeg, and allspice in the inner pot of a multi-functional pressure cooker (such as Instant Pot®). Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 1 minute. Allow 10 to 15 minutes for pressure to build.

  2. Release pressure using the natural-release method according to manufacturer's instructions, about 15 minutes. Unlock and remove the lid.

  3. Ladle mulled cider into cups and sweeten with honey. Garnish with lemon slices and additional cinnamon sticks.
