Ingredients

Original recipe (1X) yields 14 servings

  • 4 cups crispy rice cereal squares (such as Rice Chex ®)

  • 4 cups popped popcorn

  • 1 cup roasted, salted pumpkin seeds

  • 1 cup honey roasted peanuts

  • ¼ cup unsalted butter

  • 6 tablespoons packed brown sugar

  • 2 tablespoons light corn syrup

  • ¼ teaspoon vanilla extract

  • ¼ teaspoon pumpkin pie spice

  • 1 cup candy corn

Directions

  1. Mix cereal, popcorn, pumpkin seeds, and peanuts together in a 4-quart microwaveable bowl.

  2. Microwave butter, brown sugar, corn syrup, and vanilla extract together in another microwave-safe bowl, uncovered, on high power until boiling, about 2 minutes, stirring after 1 minute. Stir in pumpkin pie spice. Pour over cereal mixture and stir until evenly coated.

  3. Microwave cereal mixture, 5 to 6 minutes, stirring and scraping down the bowl every minute.

  4. Spread on waxed paper to cool, about 15 minutes, stirring occasionally to break up. Stir in candy corn.

Cook's Note:

You can use cashews instead of peanuts.
