Ingredients

Original recipe (1X) yields 6 servings

  • 7 cups quartered new potatoes

  • 1 (8 ounce) container sour cream

  • 2 tablespoons Dijon mustard

  • 2 teaspoons chopped fresh dill weed

  • 1 teaspoon dried parsley

  • ½ teaspoon salt

  • ¼ teaspoon pepper

  • 2 tablespoons green onions (Optional)

Directions

  1. Place potatoes in a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, 15 to 20 minutes. Drain, cool, peel, place in a large bowl, and chill.

  2. Meanwhile, combine sour cream, Dijon, dill, parsley, salt, and pepper in a medium bowl.

  3. Pour dressing over potatoes and toss gently. Chill before serving. Top with green onions, if desired.
