Cheater's Tiramisu

This tiramisu isn't fancy but it's delicious and it's the easiest recipe I have. Always a hit.

Ingredients

Original recipe (1X) yields 12 servings

  • 1 (16.25 ounce) package white cake mix

  • 1 ¼ cups water

  • cup vegetable oil

  • 3 large eggs

  • 1 pint heavy whipping cream

  • ¼ cup white sugar

  • ¼ teaspoon vanilla extract, or to taste

  • 12 fluid ounces brewed coffee, chilled

  • 1 tablespoon cocoa powder

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease the bottom only of a 9x13-inch glass baking pan.

  2. Combine cake mix, water, oil and eggs in a large bowl with a mixer on medium speed until well combined. Pour into the prepared pan.

  3. Bake in the preheated oven until a toothpick inserted in the center comes out clean, 29 to 34 minutes. Remove from the oven and let cool completely, about 30 minutes.

  4. Poke 12 holes in the cooled cake with the base of a serving spoon or any utensil that has a rounded bottom.

  5. Whip whipping cream, adding sugar and vanilla when it's about halfway whipped; you want it to hold its shape, but don't overwhip.

  6. Pour coffee over the cake, then immediately spread whipped cream evenly over top. Dust with cocoa powder, covering it completely. Cut and serve or chill in the refrigerator until ready to serve.

Cook's Note:

You can serve it immediately but it gets even better after a few days in the refrigerator, in my opinion.
