Ingredients

Original recipe (1X) yields 4 servings

  • 1 pound chopped boneless chicken breast

  • 3 tablespoons olive oil

  • 1 (1 ounce) packet taco seasoning

  • 1 cup salsa

  • 1 large onion, diced

  • 1 medium green bell pepper, diced

  • 1 bunch fresh cilantro, stems removed and leaves chopped

  • 1 cup shredded Mexican-blend cheese

  • 4 (8 inch) flour tortillas, warmed

Directions

  1. Put chicken in a skillet over medium heat with oil and 1/2 of the taco seasoning. Cook and stir for about 10 minutes.

  2. Add salsa, onion, bell pepper, cilantro, and remaining taco seasoning. Reduce heat to medium-low and cook for another 5 minutes. Put shredded cheese on top.

  3. Serve in tortillas.
