Ingredients
For the steak:
- 2 tsp.
brown sugar
- 2 tsp.
chili powder
- 2 tsp.
paprika
- 1 tsp.
oregano
- 1 Tbsp.
finely ground coffee
- 1 tsp.
salt
- 1
16 oz boneless strip steak
- 1 Tbsp.
vegetable oil
For the sauce:
- 1 cup
brewed coffee
- 1/3 cup
brown sugar
- 1/4 cup
bourbon
- 2 Tbsp.
apple cider vinegar
- 1 Tbsp.
Worcestershire sauce
- 1/4 cup
ketchup
- 2 tsp.
orange zest
Kosher salt
freshly ground black pepper
Directions
- Step 1 Preheat oven to 400°. In a small bowl, whisk together coffee, chili powder, paprika, brown sugar, oregano, and salt. Rub spice blend all over steak, cover, and place in refrigerator to rest, 30 minutes.
- Step 2Meanwhile, make sauce: In a medium sauce pan, combine brewed coffee with brown sugar, bourbon, ketchup, apple cider vinegar, Worcestershire sauce, and orange zest. Bring mixture to a boil, then simmer uncovered until reduced by 1/3, 25 minutes.
- Step 3In a large skillet over medium high heat, sear steak for 2 minutes on each side, or until a crust forms. Place skillet in oven and bake 5 minutes more at 400°, until meat thermometer inserted into the thickest part of the meat reads 125°. (For medium rare.)
- Step 4Let steak rest 10 minutes for slicing, then serve with coffee bourbon sauce.
