Waffle Fry Pot Pie

Ingredients
- 2 Tbsp. extra-virgin olive oil
- 2 chicken breasts, diced
- 1 tsp. garlic powder
- kosher salt
- Freshly ground black pepper
- 1/2 white onion, diced
- 1 can peas and carrots
- 1/2 cup frozen corn
- 1 can cream of chicken soup
- 1 cup water
- 1 9" frozen pie crust
- 1 bag seasoned waffle fries
Directions
- Step 1Preheat oven to 375°.
- Step 2In a large pan over medium heat, heat oil. Add chicken breasts and garlic powder, then season with salt and pepper. Cook the chicken for 3 to 4 minutes before adding onion. Cook until the onions have turned translucent, then add the peas, carrots, corn, chicken soup, and water, stirring until just combined. Remove from heat.
- Step 3Pour filling into the pie crust and top with a layer of waffle fries.
- Step 4Bake until crust has lightly browned, 20 to 22 minutes.
