This delicious and easy side dish gives a fresh Mediterranean flair to hearty red cabbage, thanks to the addition of feta and mint.

Ingredients
- 2 Tbsp. olive oil
- 1 medium red onion
- 1 clove garlic
- 4 cups red cabbage
- 1 tsp. Sea salt
- Juice of 1 lemon
- ground black pepper
- 2 Tbsp. Chopped fresh mint
- 2 Tbsp. Chopped fresh dill
- 2 Tbsp. chopped fresh parsley
- 1/2 cup crumbled feta cheese
Directions
- Step 1In a large skillet, heat olive oil over medium-high heat. Add onion and cook, stirring often, until softened, about 4 minutes. Add garlic and cook until fragrant, about 1 minute more. Add cabbage and 1 tsp. salt and cook, stirring, until cabbage is wilted and just starting to soften, about 2 minutes longer.
- Step 2Remove skillet from heat, stir in lemon juice, and season with salt and pepper to taste. Stir in chopped mint, dill, and parsley and transfer to a serving bowl. Top with Feta and mint leaves and serve warm or at room temperature.
