Cantaloupe Breakfast Bowls

This one's for the fruit lovers! This easy breakfast bowl is perfect for those warm summer days when you're craving something cold and refreshing. We're big fans of almond milk, but if you prefer dairy milk, it would work just as well. Or, if you have some extra time, homemade oat milk would be delicious.

Ingredients
- 1
cantaloupe, halved
- 1 1/2 cups
almond milk
- 1 cup
frozen raspberries, plus fresh raspberries, for garnish
- 1
banana, sliced into coins, divided
- 1/2 cup
frozen pineapple or mango
- 1/2 cup
Greek yogurt
- 1 tsp.
pure vanilla extract
- 1/2 cup
granola
Directions
- Step 1Using a spoon, remove and discard seeds from cantaloupe. Use a spoon to widen hole in the center, leaving a 1" border at the edges. Reserve removed fruit to add to smoothie.
- Step 2Combine almond milk, raspberries, half the banana, pineapple, Greek yogurt, vanilla, and extra cantaloupe. Blend until smooth.
- Step 3Pour smoothie into cantaloupe "bowls" and garnish with raspberries, granola, and remaining banana slices. Serve.
