Ingredients
- 1 tsp. olive oil
- 1/4 lb. cooked kielbasa
- 1 large onion
- 3 1/2 cups chicken stock
- 1 large potato
- 1 stalk celery
- 1 tsp. white wine vinegar
- 1/2 tsp. dried thyme leaves
- 1/4 tsp. lemon pepper
- Salt to taste
- 1/4 cup diced roasted red peppers for garnish
Directions
- Step 1Heat the oil in a 6-quart pot over medium-high heat for 1 minute. Add the kielbasa and onion and sauté until the onion begins to brown, about 6 minutes. Add the stock, potato, celery, vinegar, thyme, and lemon pepper.
- Step 2Cover and bring to a boil. Reduce the heat and simmer until the vegetables are tender, about 15 minutes. Taste and season with salt if needed. Top each serving with red peppers.
