Beef stroganoff is classic comfort food here at Delish. It’s one of my favorite easy, cozy meals to enjoy once the weather gets cold. If you’re on the keto diet, you might have missed out on hearty weeknight dinners like this one because of dietary restrictions—not anymore! I turned the nostalgic meal into a keto-friendly dinner by eliminating the flour from the recipe, and swapping out the egg noodles for steamed cauliflower rice. It’s hearty, filling, and full of all the same rich and beefy flavors we crave in the classic.

Melt some butter in a large skillet over medium-high heat before adding your ground beef. Season generously with salt and pepper, then cook the beef until it’s cooked through, around 6 to 7 minutes. Once done, transfer to a plate while we make our sauce.
Add the remaining butter and mushrooms to the skillet over medium-high heat, then cook until the mushrooms are golden. Don’t forget to stir occasionally! Season the mushrooms with a bit of salt and pepper, then add your minced garlic. Cook just until fragrant, then add the broth, cream cheese, sour cream, Worcestershire, Dijon, and paprika. Bring everything to a simmer, occasionally stirring.
Return the beef to the skillet, and give it a stir to combine everything together. Once everything is combined, serve over cauliflower rice (or your chosen side) before garnishing with parsley.
