BLT Avocado Cups

Ingredients
- 2 avocados, halved and pitted
- 1/2 cup plain Greek yogurt
- Juice of 1 lemon
- 1 cup halved grape or cherry tomatoes
- 1 cup shredded romaine
- 4 strips cooked bacon, chopped
- kosher salt
- Freshly ground black pepper
Directions
- Step 1Scoop out avocados, leaving a thick border. Dice scooped avocado and set aside.
- Step 2Make BLT salad: In a large bowl, whisk together Greek yogurt and lemon juice. Add romaine, tomatoes, and bacon and season with salt and pepper.
- Step 3Fill avocado halves with salad and season with more pepper.
