1. 1 cup all-purpose flour -
2. 1 cup whole wheat flour -
3. 3 tablespoons brown sugar -
4. 1 teaspoon baking powder -
5. 1 teaspoon baking soda -
6. 1 teaspoon ground cinnamon -
7. 1/2 teaspoon salt -
8. 2 large eggs, room temperature -
9. 2 cups buttermilk -
10. 2 tablespoons canola oil -
11. 1 teaspoon vanilla extract -
12. 1 ripe medium banana, finely chopped -
13. 1/3 cup finely chopped walnuts -

How to cook deliciously - Banana Pancakes

1. Stage

In a large bowl, whisk together the all-purpose flour, whole-wheat flour, brown sugar, baking powder, baking soda, ground cinnamon and salt. In another bowl, beat the eggs, buttermilk, oil and vanilla until blended.

2. Stage

Add the wet ingredients to the dry ingredients, and whisk until just combined. Fold in the bananas and walnuts, being careful not to overmix the batter. Editor’s Tip: Make sure not to overmix during this step so you can get the fluffiest pancakes possible. There should still be a few lumps in your batter. You could even let the pancake batter sit for five minutes before cooking so the baking powder and baking soda can work a little of their magic.

3. Stage

Pour the batter by 1/4 cupfuls onto a lightly greased hot griddle. Cook until bubbles begin to form and pop on the tops and their bottoms are golden brown. Flip the pancakes, and cook until the other side is golden brown.
