Ingredients for - Pecan-Crusted Salmon

1. 2 salmon fillets (6 ounces each) -
2. 2 tablespoons mayonnaise -
3. 1/2 cup finely chopped pecans -
4. 1/3 cup seasoned bread crumbs -
5. 2 tablespoons grated Parmesan cheese -
6. 1 tablespoon minced fresh parsley -
7. 1 tablespoon butter, melted -
8. CUCUMBER SAUCE: -
9. 1/2 cup chopped seeded peeled cucumber -
10. 1/2 cup vanilla yogurt -
11. 1/2 teaspoon snipped fresh dill or 1/8 teaspoon dill weed -
12. 1/8 teaspoon garlic powder -

How to cook deliciously - Pecan-Crusted Salmon

1. Stage

Preheat oven to 425°. Place salmon skin side down in a greased 11x7-in. baking dish. Spread 1 tablespoon mayonnaise over each fillet.

2. Stage

In a small bowl, combine pecans, bread crumbs, Parmesan cheese, parsley and butter; spoon over salmon. Bake until fish just begins to flake easily with a fork, 10-15 minutes.

3. Stage

Meanwhile, in a small bowl, combine cucumber sauce ingredients. Serve with the salmon.
