This rhubarb cake with marshmallows is a fun summer cake for kids to help make. Using fresh rhubarb, strawberry gelatin, marshmallows, and cake mix, when you cut it and take it out of the pan, flip the piece over so the rhubarb is on top.

Ingredients

Original recipe (1X) yields 12 servings

  • 2 tablespoons unsalted butter

  • 4 cups diced fresh rhubarb

  • 1 cup white sugar

  • 1 (3 ounce) package strawberry flavor Jell-O gelatin

  • 2 cups miniature marshmallows

  • 1 (18.25 ounce) package white cake mix

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.

  2. Spread rhubarb in an even layer in the prepared pan. Sprinkle with sugar, then gelatin powder; spread miniature marshmallows in an even layer.

  3. Prepare batter according to cake mix package instructions. Spread batter on top of marshmallows.

  4. Bake in the preheated oven until a toothpick inserted into the center comes out clean, 40 to 50 minutes. Allow to cool.
