Mashed Sweet Potatoes in the Slow Cooker

This is a very easy and simple recipe that you can make with ingredients (with the exception of the sweet potatoes) you most likely have in your pantry.

Ingredients

Original recipe (1X) yields 12 servings

  • nonstick cooking spray

  • 6 cups peeled and cubed sweet potatoes

  • ½ cup butter, sliced

  • ¼ cup water

  • 2 tablespoons maple syrup

  • 2 tablespoons brown sugar

  • 2 tablespoons heavy cream

  • 1 teaspoon maple extract

  • ½ teaspoon ground cinnamon

  • ¼ teaspoon ground nutmeg

  • ¼ teaspoon salt

  • 10 miniature marshmallows, or more to taste (Optional)

Directions

  1. Spray the inside of a slow cooker with cooking spray.

  2. Place cubed sweet potatoes in the slow cooker. Add butter and water.

  3. Cook until sweet potatoes are soft when pricked with a fork, 4 hours on Low or 2 hours on High. Turn slow cooker off. Add maple syrup, brown sugar, heavy cream, maple extract, cinnamon, nutmeg and salt to the slow cooker and blend with an immersion blender. Garnish with mini marshmallows.

Cook's Note:

If you do not have an immersion blender, you can mash the sweet potatoes with a potato masher or blend them in a blender.
