Ingredients

Original recipe (1X) yields 6 servings

  • 2 (15.5 ounce) cans pinto beans, undrained

  • 1 (10 ounce) can diced tomatoes with green chile peppers (such as Rotel), drained

  • 1 cup cubed cooked ham

  • ¼ cup finely chopped fresh cilantro

  • ¼ cup finely chopped red onion

  • 2 cloves garlic, minced

  • 1 dash hot sauce, or to taste

  • ground black pepper to taste

Directions

  1. Combine pinto beans, tomatoes with green chiles, ham, cilantro, red onion, garlic, hot sauce, and black pepper in a saucepan; bring to a boil. Reduce heat; simmer about 1 hour.

Cook’s Note

You can also cook this in a slow cooker.

Add 1/2 cup beer (dark Mexican beer like Negra Modelo or Dos Equis if possible) to make borrachos (drunken beans).

Add bacon and/or sausage to make a heartier version.

You can substitute 1 teaspoon jarred minced garlic for fresh cloves if desired.
