Ingredients

½ cup cashew butter

¼ cup dried cranberries

¼ cup chopped almonds

1 tablespoon coconut oil

1 egg

2 tablespoons pitted, chopped dates

1 tablespoon honey
Directions

Preheat oven to 350 degrees F (175 degrees C).

Mix together cashew butter, dried cranberries, almonds, coconut oil, egg, dates, and honey in a bowl until thoroughly incorporated. Place spoonfuls of mixture onto a nonstick baking sheet.

Bake in preheated oven until cookies smell toasted, about 12 minutes. Allow to cool and harden.
Cook's Note:
To save time, instead of chopping the dates, try to find date loaves in your supermarket in the Middle Eastern section or at a market that carries such ingredients. These loaves are often prepackaged minced dates that look like a small brick (?!) but are of course awesomely easy to use. Check ingredients carefully for added sugar or corn syrup from American brands. I try to keep a couple of these in the cupboard, and use tablespoons of them to add sweetness to any baked good that I am trying to make paleo.
