Fish Fillets in Lemon Sauce

A light, lemony baked fish fillet, with baked potatoes on the side all topped in a sprinkle of dill and parsley. Serve with white rice.

Ingredients

Original recipe (1X) yields 4 servings

  • 4 (4 ounce) cod fillets

  • 3 medium potatoes, peeled and sliced

  • ¼ cup water

  • ¼ cup lemon juice

  • 3 tablespoons olive oil

  • 3 tablespoons chopped fresh dill

  • 2 tablespoons chopped fresh parsley

  • 2 cloves garlic, minced

  • 1 teaspoon Dijon mustard

  • 1 teaspoon ground cumin

  • 1 teaspoon salt

  • 1 teaspoon ground black pepper

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C).

  2. Place cod and potatoes into the bottom of a baking dish (such as Pyrex®).

  3. Mix water, lemon juice, oil, dill, parsley, garlic, Dijon mustard, cumin, salt, and pepper together in a bowl and add to the fish and potatoes. Cover the dish with aluminum foil.

  4. Bake in the preheated oven until potatoes are tender, about 35 minutes. Remove foil and continue to bake for 10 minutes more.

Cook's Note:

You can use any type of fish you like.
