Lemon and Garlic New Potatoes

This is a simplified version of a new potato dish my Costa Rican host sister used to make when I was in the Peace Corps. It has become a favorite side dish at my house.

Ingredients

Original recipe (1X) yields 4 servings

  • 1 pound red new potatoes

  • 2 tablespoons olive oil

  • 2 cloves garlic, minced

  • ¼ cup shredded Parmesan cheese

  • 2 tablespoons lemon juice

  • ¼ teaspoon salt

  • ¼ teaspoon ground black pepper

Directions

  1. Scrub potatoes and cut into wedges. Place in a large saucepan and cover with water; bring to a boil. Cover and cook until tender, 10 to 15 minutes. Drain and set potatoes aside.

  2. Heat olive oil in the same pan over medium-high heat. Add potatoes and cook until browned, 4 to 6 minutes. Add garlic; cook for 1 minutes. Remove from the heat.

  3. Stir in Parmesan cheese, lemon juice, salt, and pepper.
