1. 3 large eggs, room temperature -
2. 2 cups sugar -
3. 3/4 cup butter, softened -
4. 1 teaspoon almond extract -
5. 2 cups all-purpose flour -
6. 2-1/2 cups fresh or frozen cranberries, thawed -
7. 2/3 cup chopped pecans -
8. Optional: Whipped cream and fresh cranberries -

How to cook deliciously - Cranberry Christmas Cake

1. Stage

Preheat the oven to 350°F. In a large bowl, beat the eggs and sugar together until they're slightly thickened and light yellow, about five minutes. Add the butter and almond extract, and beat for an additional two minutes. Gently stir in the flour until just combined. Fold in the cranberries and pecans. (The batter will be thick.)

2. Stage

Spread the batter in a greased 13x9-inch baking dish. Bake until a toothpick inserted in the center comes out clean, 45 to 50 minutes. Slice the cake into squares, and if desired, serve each piece with whipped cream and an additional cranberry on top.
