1. Stage
In medium heatproof bowl, combine egg yolk, cream, orange zest, cinnamon extract, vanilla, and 1/2 teaspoon nutmeg. Place bowl over a medium pot of barely simmering water over medium-high heat (do not let water touch bottom of bowl). Continuously whisk until mixture begins to thicken slightly, 2 to 3 minutes.

Add chocolate and stir until melted. Remove from heat and pour into a large shallow vessel. Refrigerate until chilled and firm, 1 to 2 hours.

In a shallow bowl, whisk powdered sugar, ground cinnamon, and remaining 1/2 teaspoon nutmeg to combine.

Scoop about 2 tablespoons cream mixture, roll into a ball with your hands, and toss in powdered sugar mixture. Arrange on a parchment-lined sheet tray and refrigerate until ready to serve.
