Ingredients for - Eggnog Truffles

1. 1 large egg yolk -
2. 1/2 c. heavy whipping cream  -
3. 3/4 tsp. finely grated orange zest -
4. 1 tsp. cinnamon extract or 2 tsp. ground cinnamon -
5. 1/4 tsp. pure vanilla extract -
6. 1 tsp. grated fresh nutmeg, divided -
7. 1 lb. white chocolate chips -
8. 1/2 c. (60 g.) powdered sugar  -
9. 1/2 tsp. ground cinnamon  -

How to cook deliciously - Eggnog Truffles

1. Stage

In medium heatproof bowl, combine egg yolk, cream, orange zest, cinnamon extract, vanilla, and 1/2 teaspoon nutmeg. Place bowl over a medium pot of barely simmering water over medium-high heat (do not let water touch bottom of bowl). Continuously whisk until mixture begins to thicken slightly, 2 to 3 minutes.  

2. Stage

Add chocolate and stir until melted. Remove from heat and pour into a large shallow vessel. Refrigerate until chilled and firm, 1 to 2 hours.

In a shallow bowl, whisk powdered sugar, ground cinnamon, and remaining 1/2 teaspoon nutmeg to combine.

4. Stage

Scoop about 2 tablespoons cream mixture, roll into a ball with your hands, and toss in powdered sugar mixture. Arrange on a parchment-lined sheet tray and refrigerate until ready to serve.
