1. 2 packages (10 ounces each) frozen chopped spinach, thawed and drained -
2. 1 pound flounder fillets -
3. 3 tablespoons chopped onion -
4. 2 tablespoons butter -
5. 3 tablespoons all-purpose flour -
6. 1/4 teaspoon salt -
7. 1/4 teaspoon pepper -
8. 1/8 teaspoon ground nutmeg -
9. 1-1/2 cups fat-free milk -
10. 1 tablespoon grated Parmesan cheese -
11. 1/4 teaspoon paprika -

How to cook deliciously - Flounder Florentine

1. Stage

Sprinkle the spinach into a 13x9-inch baking dish coated with cooking spray. Top the spinach with the flounder fillets.

2. Stage

In a large saucepan, saute the onions in butter until they're tender. Stir in the flour, salt, pepper and nutmeg until blended. Gradually add the milk, then bring the mixture to a boil, and cook and stir for two minutes or until thickened.

3. Stage

Preheat the oven to 350°F. Pour the cream sauce over the fillets, then sprinkle the Parmesan cheese and paprika over the dish. Bake the fish, uncovered, for 20 minutes or until it flakes easily with a fork.
