How to cook deliciously - Galaktoboureko
1. Stage
Heat milk and cream to simmer. Whisk egg yolks and sugar until foamy. Temper eggs into simmering cream and stir until slightly thicker, about 2 to 3 minutes. Add vanilla and salt. Add farina slowly and cook until a loose oatmeal consistency, about 7 minutes. Add lemon zest. If too thick, thin down with milk. Reserve.
2. Stage
Melt butter. Brush butter on bottom of a 7" x 14" casserole pan. Butter 6 layers of phyllo and cut to fit pan. Arrange into pan. Add farina mixture and arrange 6 more layers of buttered phyllo. Bake at 350 degrees F for 10 to 12 minutes until custard is set and phyllo is brown.
