1. 2 tbsp. extra-virgin olive oil -
2. 2 garlic cloves, minced -
3. 1/8 tsp. cayenne -
4. 1 tsp. lemon juice -
5. 1/4 c. chopped fresh parsley, more for garnish -
6. 1 tsp. kosher salt -
7. 1 1 1/2 to 2 lb. salmon fillet, skin on -
8. 1 cherry tomatoes -
9. 1 lemon, sliced into rounds -

How to cook deliciously - Garlic and Herb-Roasted Salmon and Tomatoes

1. Stage

Preheat oven to 450 degrees F. Meanwhile, in a small mixing bowl, combine olive oil, garlic, cayenne, lemon juice, parsley, and 1/2 tsp. salt.

2. Stage

Line a sheet pan with parchment paper and place salmon fillet skin side down in the center. Season fish with 1/2 teaspoon salt. Arrange tomatoes and lemon slices around salmon and drizzle with garlic and herb mixture.

3. Stage

Place sheet pan in oven and roast until salmon is just cooked through, about 8 minutes. Heat broiler. Broil until tomatoes are just blistered and lemons have a slight char, about 5 minutes more.

4. Stage

Arrange on a large platter and garnish with parsley. Serve immediately.
