Ingredients for - Greek Cucumber Cups
1. 4 large cucumbers -
2. 1 pt. cherry tomatoes, quartered -
3. 1/2 c. kalamata olives, chopped -
5. 2 tbsp. chopped dill, plus more for garnish -
How to cook deliciously - Greek Cucumber Cups
1. Stage
Cut cucumbers into 3” pieces. Using a melon baller or spoon, create a well in each cucumber.
2. Stage
In a large bowl, combine tomatoes, olives, feta, dill, lemon juice, garlic, olive oil and oregano and stir until combined. Season with salt and pepper.
3. Stage
Spoon salad mixture into cucumbers. Garnish with more dill if desired and serve.
