1. 4 cups thinly sliced yellow summer squash (3 medium) -
2. 3 tablespoons olive oil -
3. 1/2 teaspoon salt -
4. 1/2 teaspoon pepper -
5. 1/8 teaspoon cayenne pepper -
6. 3/4 cup Panko bread crumbs -
7. 3/4 cup grated Parmesan cheese -

How to cook deliciously - Oven-Fried Squash

1. Stage

Preheat the oven to 450ºF. Place the sliced squash into a large bowl. Add the olive oil and toss to coat. Add the salt, pepper and cayenne and toss again to thoroughly coat the squash with the seasonings.

2. Stage

In a shallow dish, mix the panko and Parmesan cheese. Dip the squash pieces into the breading mixture, flipping to coat both sides. Place the breaded squash on parchment-lined baking sheets.

3. Stage

Bake the squash for 10 minutes, then rotate the baking pans. Continue to bake for an additional 10 to 15 minutes or until golden brown and crispy. Remove the pans from the oven and serve the oven-fried squash hot.
