1. 2 small red potatoes, cubed -
2. 1 tablespoon butter -
3. 1 small zucchini, cut into 1/4-inch slices -
4. 1/8 teaspoon garlic salt -
5. 1/2 pound smoked sausage, cut into 1/2-inch slices -
6. 1/8 to 1/4 teaspoon pepper -
7. Grated Parmesan cheese, optional -

1. Stage

In a small saucepan, combine the potatoes and enough water to cover; bring the water to a boil. Reduce the heat and cook, uncovered, until tender, 15-20 minutes. 2. Stage

In a large skillet, heat the butter over medium-high heat. Sauté the zucchini with garlic salt until it’s crisp-tender. Add the sausage. Cook and stir until the sausage is browned. Editor’s Tip: If you don’t have garlic salt on hand, substitute minced garlic.

Drain the potatoes and stir them into the zucchini mixture. To serve, sprinkle with pepper and, if desired, Parmesan.
