1. 1 c. (2 sticks) unsalted butter, softened -
2. 1 c. (115 g.) confectioners' sugar -
3. 1 tsp. pure vanilla extract -
4. 2 1/4 c. (270 g.) all-purpose flour -
5. 1/2 tsp. kosher salt -
6. Coarse sugar, for sprinkling -

How to cook deliciously - Shortbread Cookies

1. Stage

In a large bowl, using a handheld mixer on medium-high speed, beat butter and confectioners’ sugar until creamy. Add vanilla and beat until combined. Add flour and salt and beat on medium speed until just combined.

2. Stage

Place dough between 2 pieces of parchment and roll out to 1/3" thick. Remove top piece of parchment. Trim edges as needed, then cut into 2" squares. Place parchment with cookies on a baking sheet. Freeze until cold, about 30 minutes.

Arrange a rack in center of oven; preheat oven to 350°. Separate cookies and arrange on a clean parchment-lined baking sheet, spacing 1" apart. Sprinkle with coarse sugar.

4. Stage

Bake cookies until edges start to turn golden, 12 to 14 minutes. Let cool slightly.
