Ingredients for - Green olive & herb dressing
1. 50g pitted green olives -
2. large handful chopped parsley -
3. large handful chopped mint leaves -
4. extra virgin olive oil , for binding -
5. 1 tsp red wine vinegar -
6. small pinch golden caster sugar -
How to cook deliciously - Green olive & herb dressing
1. Stage
Finely chop the olives and tip into a bowl with the parsley and mint. Drizzle in enough olive oil to just bind everything, then add the red wine vinegar, golden caster sugar and a pinch of salt. Can be made a day ahead and kept in the fridge.
