Ingredients for - Green olive & herb dressing

1. 50g pitted green olives
2. large handful chopped parsley
3. large handful chopped mint leaves
4. extra virgin olive oil , for binding
5. 1 tsp red wine vinegar
6. small pinch golden caster sugar

How to cook deliciously - Green olive & herb dressing

1 . Stage

Finely chop the olives and tip into a bowl with the parsley and mint. Drizzle in enough olive oil to just bind everything, then add the red wine vinegar, golden caster sugar and a pinch of salt. Can be made a day ahead and kept in the fridge.
