Ingredients for - Mixed Summer Berry and Yogurt Parfaits with Toasted Coconut
1. 1/2 c. shredded unsweetened coconut -
2. 4 c. nonfat plain Greek yogurt -
3. 2 c. crushed graham crackers -
4. 2 c. diced strawberries -
5. 2 c. total of mixed blackberries, raspberries, and blueberries -
How to cook deliciously - Mixed Summer Berry and Yogurt Parfaits with Toasted Coconut
1. Stage
Preheat oven to 350 degrees F. Place coconut on a sheet tray and toast 1 to 2 minutes, checking every 30 seconds. Remove as soon as coconut starts to brown. Set aside.
2. Stage
Spoon about 1/4 cup of yogurt into a wine or martini glass. Layer on about 2 tablespoons each of graham crackers, diced strawberries, and mixed berries. Add another layer of each, then finish with a sprinkle of the toasted coconut. Repeat with 7 more glasses and serve immediately. Looking for more dessert ideas?
