1. 4 thick slices of baguette or 2 country loaf slices, halved -
2. 1 large tomato , thickly sliced -
3. 100g firm goat's cheese , thickly sliced -
4. 4 large basil leaves -
5. olive oil , for drizzling -

How to cook deliciously - Summery cheese on toast

1. Stage

Heat the grill to high. Toast the bread on one side. Flip the slices over and top each with a slice of tomato, goat’s cheese and basil leaf. Drizzle a little oil over each one. Grill for about 5 mins until the cheese is just starting to melt and the basil leaf is crispy.
