Ingredients for - Swamp Cabbage Salad

1. 2 c. shredded iceberg lettuce -
2. 1 can hearts of palm, drained and thinly sliced -
3. 1 peach, pitted and diced -
4. 1/3 c. diced pitted dates -
5. 2/3 c. fresh cubed pineapple -
6. 1 tbsp. minced candied ginger, plus more for topping -
7. 1 pt. vanilla ice cream, softened -
8. drops green food coloring -
9. 1/4 c. chunky peanut butter -

How to cook deliciously - Swamp Cabbage Salad

1. Stage

Make the salad: In a large bowl, toss all salad ingredients to combine. Refrigerate until ready to serve.

2. Stage

Make the ice cream topping: Combine ice cream and food coloring until combined. Fold in peanut butter. Freeze 20 to 25 minutes, then scoop two balls of ice cream on top of each serving of salad. Sprinkle additional candied ginger on top before serving.
