1. 4 cups fennel bulb, very thinly sliced
2. 3 cups radicchio, very thinly sliced
3. 1 lightly packed tablespoon fresh dill, chopped
4. 1/4 cup plus 1 tablespoon seasoned rice vinegar
5. 1/3 cup neutral oil, such as avocado or grapeseed oil
6. 3/4 teaspoon sea salt
7. 1/8 teaspoon freshly ground black pepper

1 . Stage

Toss the slaw: In a large bowl, toss the fennel, radicchio, dill, vinegar, oil, salt, and black pepper until combined.

Marinate and serve: Cover the bowl and refrigerate for 30 to 60 minutes to let the dressing penetrate the fennel and radicchio. Before serving, toss again.
