Ingredients for - Jewelled couscous

1. 400g couscous
2. 2 tbsp lemon-infused oil
3. 500g soft dried apricot , chopped
4. 1 cucumber , deseeded and chopped
5. 1 large yellow pepper , deseeded and chopped
6. 140g pitted black olive , chopped
7. 140g sundried tomato , chopped
8. small bunch parsley , chopped
9. 12 cherry tomatoes , halved

How to cook deliciously - Jewelled couscous

1 . Stage

Place the couscous in a bowl and cover with 700ml boiling water. Cover with cling film and leave for 10 mins, until all the liquid has been absorbed.

2 . Stage

Pour over the oil and some seasoning, mix and fluff up the couscous with a fork.

3 . Stage

Gently stir through the remaining ingredients and serve.
