1. 50g unroasted cashew nuts -
2. 1 tbsp coconut oil -
3. ½ tsp cinnamon -
4. 2 apples , sliced straight across into rounds -
5. 2 generous lemons wedges, for squeezing over -

How to cook deliciously - Cinnamon cashew spread with apple slices

1. Stage

Pour boiling water over the cashew nuts in a small bowl to cover, and leave for 2-3 mins so they soften a little. Drain, then return to the bowl. Add the coconut oil and cinnamon and blitz with a stick blender to chop the nuts into a rough paste. Serve with the apples slices and lemon wedges.
