1. Stage
Using a sharp chef’s knife, trim off the tough stem of each clove and twist clove to release garlic skin. Peel and slice each clove thinly, then stack slices and cut into matchsticks. Gather matchsticks into a bundle and carefully slice through to produce a fine mince.
2. Stage
If a finer mince is needed, run your knife through the garlic a few more times until desired size is achieved.
