Ingredients for - Halloumi with courgette & rice salad

1. 4tbsp olive oil -
2. 1 red onion thinly sliced -
3. 1 garlic clove crushed -
4. 1tsp chilli flakes -
5. 1tsp coriander seeds crushed -
6. 2 courgette sliced -
7. 100g frozen peas -
8. 1 x 250g pouch microwave brown rice -
9. 1 lemon juiced -
10. mint finely chopped -
11. 1/2 block halloumi sliced -

How to cook deliciously - Halloumi with courgette & rice salad

1. Stage

Heat half the oil in a frying pan. Add the courgette and fry for 10 mins or until tender and golden on the outside. Set aside.

2. Stage

Add the onion to the same pan. Fry gently for 10 mins or until softened. Add the chilli and coriander seeds and cook for 1 minute. Add the courgette and peas to the pan and warm everything through.

3. Stage

Heat the remaining oil in a separate frying pan. Add the halloumi and fry on either side for 1-2 mins or until a deep golden brown. Cook the rice according to package instructions, combine it with the veg, lemon juice and mint. Divide between 2 plates and top with the halloumi and some extra mint leaves.
